Devilled Turkey

    This is my Mum's recipe - serves 2 to 4 depending on appetite.

    Use leftover cooked turkey - brown meat is best, ideally cut or pulled
    into irregular pieces of between one and three bites in size.

    Sauce - mix together

    4 tablespoons Worcester Sauce
    1/2 to 1 teaspoon curry powder (to taste)
    1 egg
    1 dessert spoon vinegar
    2 teaspoons brown sugar

    You also need plenty of breadcrumbs (I use stale white bread).

    To cook - dip pieces of turkey in sauce, then in breadcrumbs. Shallow
    fry in plenty of oil until breadcrumby bits are light brown and crisp.
    Cook in batches if necessary so as not to overcrowd pan. Serve with
    plenty of mash, peas if you like, and a glass or two of your favourite
    beer. It's ambrosial. Trust me.

    Good. When I think about it, I fry it until it's really quite brown,
    bu that's a matter of taste.
