I've got a couple of hundred gigs to move over to another PC. I can network
both, or stick the drive in a USB caddy. Which is faster?

I'd use what ever is simplest to setup and go away and do something
else whilst the transfer is in progress.

  5. Depends how fast the network is... On a gig network it's probably faster
to copy it across the network. Although, as you asked an hour ago,
    you've probably finished by now.
