Free email (as in free beer, I suppose). Switching my elderly mum to a
Vodafone PAYG dongle (from dial-up) so she'll need a free
POPable/IMAPable email account. Preferably spam-filtered. Years since
I've used one so what's the best and what's to avoid (I suppose one or
two lines of text-only advertising would be acceptable).

As the others said, Gmail. Good spam filtering, and pretty reliable.

.... and IMAP usually keeps working even if the front end goes down.

Except it's really horrible if you try and use it with Apple Mail!

Why do you say that? I don't find any problems.

I just can't get a grip with the way Google uses labels, which turn up
as folders in Mail, and with my Smart Mailboxes, I can get 3 copies of
    everything.

I never used to have issue with it either. Not been for a couple of
years, though. Now I use T-bird for IMAP mail and usenet.

Ah, I don't use Smart Mailboxes so wouldn't have noticed anything with
    them.

I set everything up in Mail, then just replicated it to Gmail. So I
have nested labels for my folders structure, but because I don't
really use the web interface much it doesn't matter.

  14. I don't like the way gmail handles nested folders, tbh. But, as you
correctly point out, it only matters when you're on the web interface.

Aye, they just create duplicated sets of messages, which don't seen to
    clear away properly once read.

I make a lot of use of Apple's 'Smart' stuff.
I don't really often use the web interface either. I do have a fairly
comprehensive organised setup in both though (having tried out the web
interface at one time), which just ends up being a real mess, which I
can't be arsed to sort out, POP works well enough for me anyway.

I should use it more but I always forget that it's there because it's
not something I'm used to using iyswim.

Although I do use it a lot in Aperture for tagging photos and creating
    albums.

Yup, it took me ages to work it out, but it's really pretty useful once
    you do.
Yes, Smart Albums along with a good Keyword setup can be a powerful
organising tool. I tend to use them to find more obscure stuff too, such
as interesting EXIF information, images that haven't got any keywords,
    and unedited Raws.
