I can think of a few ways, but no idea how they do it outside my own private reality. In my reality, one could possibly: flash a suitable wavelenght of light (say a laser) and measure how much got bounced back. This would only work for water vapour, but that's probably all you'd need.. One could have a target at one end of the ship and a detector at the other and measure how visible the target was. One could point a camera horizontally off the ship and measure how sharp the horizon appeared.
