It's about halfway between beef and bison and has a great flavour. One of the best barbecues I've ever done involved four horse fillet steaks on a grill in Sardinia. Absolutely gorgeous. Hence why I smuggled a shitload back. Every time I go to Nyon I drag people along to one of the restaurants down by the lake, all of which seem to have horse on the menu. Last time I went I had twelve people all munching the stuff.
