    Years ago, when my mum had a Rayburn range, she had a large saucepan on the
    hob. She used to buy whole lambs for the freezer and the joints, half legs
    or half shoulders, would be pot roasted in the saucepan. She used to have
    the breast chopped into strips. They were lobbed into the saucepan and
    effectively deep fried in the 2" of fat in the bottom of the pan. They were
    delicious hot or cold. I used to get bollocked for returning home from the
    pub and scoffing the plateful she had left in the fridge, supposedly for my
    dad's lunch the following day.

    you aren't describing a gigot. A gigot is a leg of lamb or mutton, a word
    used in English for centuries. It is either the entire leg or if the leg is
    cut into half, it will be the lower, triangular shaped portion.

    I know the cut you are talking about, a fairly recent introduction into the
    UK I believe. SteveH might correct me on that. although it wasn't a cut I
    remember seeing in Herefordshire when my grandfather was farming. I've
    never seen it described as anything other than a leg steak.

    I am as far as a frog is concerned. Go in to a boucherie and ask for a
    gigot d'agneau and you'll get what I am describing - IME. You don't
    usually have to specify a 'tranche'. Often found in their window cut
    thus and described as such. Perhaps it's a Limousin thing.
    Not in the UK, no.

    Can't you just buy a bit of pork belly and cut it up?

    Or do what I'm doing - stick the whole thing in a slow cooker and get
    ready for heart attack heaven at teatime.

    Certainly easy enough to buy in my local Sainsbury's

    Ditto belly in large lumps which you cut up if you must. I like to roast
    it whole with chinese spices a la Rick Stein

    My local Tesco Metro has them and I can order them from Tesco, Sainsbury or
    Asda home shopping. Even the Lidl next to the Uni buildings stock them.

    Slow roast belly has been voted "best British dish" fairly recently and TV
    chefs are always doing it, so I'm surprised it's not available in your neck
    of the woods.

    Got a piece of brisket for tomorrow. It'll be in the slow cooker later with
    some veggies & beef stock. Should be nice & tender by tea time tomorrow.

    Beer, wine, eggs, cheese, yoghurt, cream, smoked albacore, 10
    different veggies, 38 different condiments/sauces.
