    I thought they were easy enough to find in the UK these days.

    Given the choice, would you rather get the genuine article from a
    charcutier or whatever some supermarket is pleased to call rillettes
    (c.f. biltong). Of course, home-made trumps all comers.

    You're right, of course, although I'm usually quite happy with the
    branded stuff in Supermarkets over here.
    Never tried it, although I know it's supposed to be dead easy. Got a
    recipe?

    mmm, horse meat Bresaola. Brought some back vacuum packed last time I
    was in Rome

    Good job customs didn't find it. I suppose it'd be classed as raw
    meat :0

    Finland but I was advised it would be against regulations.

    I brought five pounds of assorted frozen horse meat back from Sardinia
    in my suitcase a couple of years ago. Customs didn't bat an eyelid.

    Everybody else says do it in the oven but Anthony Bourdain's recipe
    is: half pork belly, half pork shoulder, cut into 2cm chunks. Cover
    with water and cook with a bouquet garni at the lowest heat the stove
    gives you for six (yes, six) hours. When it's done, scoop it out of
    the water (make sure you include the fat that's rendered out) and
    shred it with two forks, adding salt (you'll probably need more than
    you think). Pack it into suitable containers, cover with a slice of
    pork fat to seal it and keep it in the fridge. Give it a few days for
    the flavour to develop. Eat at room temperature.

    I've tried replacing the shoulder with rabbit and that works too. I'll
    try goose when I have a small enough amount available.

    Germany in January.

    The only 'tools' I took were gaffer tape and cable ties to repair
    crash damage and a European recovery card for anything serious.

    true, no?
    Surprising how many riders won't put fluid that doesn't have a bike
    maker's approval written on it in their precious bodily steeds.

    Jeeeeesus! Italy on a ZXR400! Must have been crippled on arrival. I did
    London to Edinburgh once I couldn't walk for a week on my return. They're
    entertaining as hell but for that far I think something bigger may be in
    order.

    Ah yes, that would make more sense.
    The stuff I brought back was Elf & Total branded (no surprises
    there !), but Carrefour also did their own brand that was ACEA rated
    and 'Moto 4T'

    He said Italy - it was fine on its last run, nothing happened to it -
    well it lay on its side in a camp site cracking the indicator glass
    but that's because I sat on it backwards and wriggled then it fell
    over.
    Pah, gaffer tape and cable ties - over preparation.
