But I asked him why they were best.
I just think it;s that they don't know any diffferent.
There's a SuperU in Altkirch (~10km away) that has parsnips all the
time (or at least has for the last six months or so), so no probs
    there anymore.

To be able to cook a steak properly means, by my definition, to be
able to cook it to the preferences of the person that's going to eat
it, not those of the cook. I like my steak á point (med. rare-ish) and
my wife prefers them 'bien cuit' ( still pinkish but not oozing juices
). Getting that right, and at the same time, is not so simple.

    One bowl vs. one pan?
I fail to see how this is any different from a pan.

Better, strictly. In strictly gastronomic terms I am with Ali= - Vale of
Evesham it has to be when in season. I volunteer for a blind tasting in
    6 months time.
Nothing wrong with a bit of tradition sometimes.
Definitely going to try parsnip growing this year. The soil is suitably
light and sandy. The deer and boar will have to be kept at bay though. I
really need to rig up some kind of unattended irrigation system. Plenty
of water in the stream, but the only place sensible to grow crops is
above that. I keep meaning to google ram-pumps. Another possibility is a
solar powered pump I suppose, or even a mini-water wheel. A header tank
and irrigation pipes would be not be too hard to set up. I don't think
the authorities would worry about the volume of water I would abstract,
given that had a cunning mod. not been made to the storm drainage by the
stone mason across the road it wouldn't come my way at all.

  5. I'll bring the bucket of melted butter. I stayed at a pub in Evesham in the
middle of asparagus season once. They served a plate of steamed 'gras with
melted butter that I still salivate to recall. It had been dug up that
    afternoon. <drools>

Disorganised shite, with every regional co-op having its own little
cockerel crowing on top of the dungheap.

Sorry if that's not the answer you were hoping for.[/QUOTE]

Only slightly better than Somerfield then... The one in Benson employs
the village dross, a complete shower of shit...

It was Corfield's claim I was questioning.
6 months? Why wait that long? Season usually starts in March over
here. Local preference is for asperges blanches, often served wrapped
in ham with hollandaise over. Not bad, but I've never worked out what
    all the fuss is about.

  8. Green asparagus, with melted butter, and some black pepper. Sublime.

Start them at different times and remove the one that's to be 'a point
when it's ready if the other is taking a little time; covering it with
    foil to 'rest'.

It shouldn't be *that* difficult for a half-decent cook.

I always try to find a pub serving home cooked food when I'm looking
for somewhere to stop wherever I'm working. Luckily I've found one
where I am at the moment because I could be there for quite a while.

  12. Major skill for a decent cook, innit: timing. One of the most useful things

No, I never suggested it was 'that difficult', but it's clearly
nothing like as simple as making scrambled fucking egg.

  16. The point is that the crop is at its best and cheapest at that of year.
British asparagus is recognised as being a food product we are good at
producing if only for a relatively short season. Why would anyone buy
imported stuff that's been flown half way round the world?

*If* you were remotely bothered (and it seems you aren't) about
supporting British producers when they produce something of a good
quality at a decent price then the comment I made might have had some
resonance. There was no suggestion of *forcing* people to buy anything.

<sigh> - yet another clash with you.

Why not? I still don't see why you think that BRITISH is best. If you
were a real fan of the stuff, wouldn't you be interested in getting it
a month or so earlier from just a few hundred km away?
WTF? I suggest that if you were remotely bothered about that you
should start looking at more major things, like cars and motorbikes.
If you're happy to buy a Honda cos it's better at what you want from a
motorbike what right have you got to suggest to anyone that they
    should 'support' British produce?
Just 'cos you choose to ignore the others who don't agree with you...
