OT smoked salmon

  1. Best before date was yesterday and I've still got loads left. How long
    does it keep (it is smoked after all) and any ideas on how to use it
    all up?

  2. Feed some to your cat. If it doesn't die within a day, it's probably
    safe to eat.

    Actually, I'm faced with this dilemma on a recurring basis; finding
    half-used tins of tuna at the back of the fridge, I usually clear a
    nostril and give them a bloody good sniff. I haven't died yet or had all
    that many untoward toilet experiences.

    Should be OK for a few days, but if you wantr to keep it longer, cook it in
    something and then freeze it.

    Can I suggest somked salmon and scrambled eggs, or smoked salmon sandwiches
    with horseradish?

    Strips into hot tagliatelli with cream and herbs

    Bad form abd all that, but strips stirred into spaghetti with lemon juice
    and chilli flakes and melted butter is yummy.

  6. It keeps fine for *days* after the SBD. First, the safety margins built
    into SBDs are generous and secondly, as you say, it's smoked.

    It freezes well. Or make pate out of it.

    of wisdom:
    I reckon the well known dairy not a million miles from here is
    relabelling their milk. I bought a 2ltr carton/tub/bottle on new year's
    eve with a UBD of 6th January. I opened it last night and it's fucking
    rank. It's two days away from being yoghurt.

    "Sell By", "Use By" and "Best Before" all mean very different things.

    "Use By" is the only one you really really should stick to.

    I think I'm getting less reckless in my food experiments as I get
    older. I always tip it out of the tin and into a bowl now.
    I have immodium if it all goes horribly wrong.

  11. Excellent, thanks. My dill died before I froze any so chives or fennel
    as a substitute. I've no cream cheese, cheddar would over power the
    salmon so a good chunk of decent butter instead should work.

    Kids will turn their noses up at it, but sod them all the more for me.

  13. Was planned for breakfast new year's day but the bacon seduced me.
    After a week away from it over Xmyth I was starting to feel sorry
    about mocking Blaney.
    I've no decent bread in.
    Doh, should have worked this one out.
    I've got so many ideas now I may have to buy some more.

    Depends on what it is and how cold it's kept. Use by dates assume
    normal refrigeration levels, i.e. around +5degC. Some fridges, like
    our Bosch, with fan-assisted cooling, can very accurately keep the
    fridge between zero and .5 degrees, so many food items will keep for
    _much_ longer.

    For example, in a normal domestic fridge lamb will only keep for a few
    days, whereas beef will happily survive for a couple of weeks. At
    +.5DegC, however, they'll keep for about the same time.

    I was vastly amused by the new year's eve menu[1] at the French hotel
    we were stayiung at last week. The starter choice on their "Menu
    Enfant" was pâté de foie gras or smoked salmon. I can't begin to
    imagine what would happen if that was offerred to an average english
    child.

    [1] Excellent, it was. Priced at Eu108 pp, but included in the
    half-board price.

    it. She's just spent 10 days with me and it was a fucking nightmare
    finding places to eat that she'd be ok in.

    She stopped eating most animal meat when she found out from some bloke
    how the Maltese kill the animal. She stopped the guy telling her before
    he got to how they kill chickens, so she'll still eat those.

    My teenager would want both. He's always been fond of fish and has liked
    pâté since I introduced it to him when he was about 9 or so.

    As has Jess. Although it has to be said it's pate, pate rather than foie
    gras but the point remains much the same.

    She's pretty partial to sea food and was pretty much in heaven when we
    were on holiday on the Ile d'Oleron.
