I've noticed since replacing he pads and disks on the Skipda, that the
brake pedal is spongey (which suggests a bit of air in there), but worse
still, with constant pressure on the pedal, it slowly sinks into the
    carpet.

The only thing I can think of is knackered master cylinder with a bit of
    bleed-back past the seals.

Likely to be right (for once)?

I would have thought that that would only have varied the assistance?

"The good Air that has entered the ABS controller can be bled out.
Bad Some vehicles require the use of a hideously expensive
proprietary ABS scan tool to cycle the pump and valves to purge the last
of the air. But there's a simple solution to that: Never let any air
enter the system. You can flush a system with fresh fluid by using
nothing more than a wrench that fits the bleeder bolts — and a helper
    with a normal attention span.[1]"

Except that on my old (95) Vectra the same symptoms were diagnosed as
requiring a new ABS controller. On being told it would be 500 quid for
the controller plus loads of labour I PX'd it for a nice Honda.

Seems like you're sort of right. Apparently the way the servo works on
the VW-group TDi engines means that this is perfectly normal behaviour.
Different on the petrols apparently, but the key thing is that mine's
    fine :)

So did you not notice similar behaviour before the pad and disk change?

<Goes out to see if the 2.0TDi behaves in a similar fashion>

Having recently done the same on mine, I can confirm that it's always
been like that and was even before I did the brakes.

I'd not noticed it, but it doesn't mean it's not done it.

From day one, it's braked well with only a gentle push on the pedal, but
it was only now when I changed the pads etc that I had to pump the pedal
to make sure that I had fluid in before driving off that I noticed.

On testing mine I detect a degree of 'creep' if keeping a firm pressure
on the pedal, but it certainly doesn't reach the carpet.

The Vectra I mentioned went quite odd. If you jabbed the pedal hard it
was OK, but if you braked gently it was a case of (wrong) pedal to the
    metal.
