    There's a nice chap who I work with who's asking £3.50/lb [1] for his
    exceedingly tasty set honey. This topic has reminded me that I need to stock
    up for Christmas, as that could turn out to be a bargain. He does a really
    rather nice heather honey for a quid extra.

    He didn't do too badly this year but only half his hives survived last
    winter and now he's buying in some 'stuff' from the continent to treat his
    bees, lest they suffer worse survival rates this winter.

    You're missing one important thing stated in that report: it's only the
    domestic supply that is going to run out by Xmas. Whilst this is not
    good for those that rely on the income or need bees to pollinate crops,
    there is not going to be a shortage of honey. As the film shows,
    supplies from other parts of the world are available.

    Of course, the product from craft suppliers is likely to be better than
    mass produced, homogenised stuff from supermarkets. However, people will
    only pay a reasonable mark up before they resort back to Gales etc.

    Of course, there are those if use that actually prefer it
    crystallised. It has a subtly different flavour, and somehow more of a
    bite to it.

    In any event, it's very simple to de-crystalise honey - just a minute
    or so in a microwave, or five minutes in a bowl of hot water, and
    it'll revert to liquid gold, if that's what you want.

    I believe my father had run ins with the same EHO that pulled Lanark
    Blue cheese. In his case because the labelling didn't correctly identify
    the ingredients - they were plain gold with "Scottish Honey" on them. I
    think the EHO was looking for a list of what the honey was made of as he
    was told "I've asked the bees, but they won't tell me what they make it
    out of." My suggestion of "processed bee regurgitation" didn't go down
    well on either side of the phone line.
    I think my Dad went the same way, at one point I was getting my car
    serviced (at a local garage) by taking along the parts and a box of
    honey jars.

    Sadly varoaa or whatever killed off his 15 or so hives last year and he
    decided to give it up.
