Scrape/peel the skin off to clean then grate finely and mix with just enough Hellmans mayo to bind. Store in jars in the fridge.

I have a little chili pepper bush in a largish earthen pot which is loaded with nice looking (and tasting) fruit. I've been harvesting as required but I can't see it all being used this side of the frosts [1]. I have about 15 2" peppers left. Anyway, harvest and storage - how to? Personally I like swwet an sour chilli garlic sauce. Same weight of garlic as chilli. Process to desired consistency. Add vinegar and sugar to taste. Stick in sterilised jars and away you go. Wear rubber gloves.... TBH I've never seen it go off. It never lasted long enough, but several months. *ding* yogurt pots make handy containers for portion sized amounts: line them with plastic bags and then transfer the bags to a larger container once they are frozen You'll get freezer burn on them if keeping for many months. For longer storage I'd cook them up with some tomato, herbs & onion to use as a base for a pizza or pasta sauce.
