Shot plastic clays with a laser shotgun.
Drove an Argocat round a very small twisty circuit. [1]
Pretended to not fall into a wooden shark and plastic crocodile
    infested grassy field.
    Drove/aimed/wafted(?) a mini hovercraft. [2]
    Played with bows and crossbows.

And my team won the company day out!

[1] Christ these things turn quickly - brakes were very digital, off
completely or all wheels locked on one side. Great, violent fun.
[2] Ha! Just HA! I want my own. And a field to play on. [3]
[3] The field being the downer, I know I could build my own hovercraft
but don't have anywhere to play.

I had a go in a mini hovercraft a couple of years back at Belvoir
Castle. Around a field and over lake. I wasn't particularly good at it
mainly because I was pissing my self laughing at the time.

    What a hoot!

There weren't any areas of water where we were, but the instructor (who
as part of his job *has* to play on one for a minimum of 2 hours a
week, bastard!) said he wouldn't trust it on water. Some problem with
actually floating if the engine conked out.

My sister bought 40 acres recently, but I've not got a fucking hovercraft to
    play on her fields with.

Do you spend (or at least try to spend) as much time sideways as possible?

Ice go karting was amazing fun, mainly due to the ridiculous amount of
time spent travelling sideways. The track was sufficiently twisty so that
if you were travelling in the direction the kart was facing then you were
    probably doing it wrong.

I had a go on one once, but the bloody engine kept losing power and it
kept grounding. When it actually deigned to hover though: jolly good
    fun.

Personally I spent most of the time going "OWW my fucking knee hurts!"
until the last lap where I sussed out a comfortable position where I
could kneel and chuck my body weight around, but yes, sideways is a lot
of fun, and kind of compulsory :)

I had a similar experience at Buckmore Park on slicks in the pissing
rain. You knew when you were off the racing line cos five gallons of
    puddle went up your legs.
