Is there anyone of particular repute in these sorts of areas?
If they've got an MOT shop included, so much the better...

I bloody love being back riding, even in the pissing rain, but I'm not
quite so keen on slightly lumpy starting and the occasional stall. A
    duff plug has been mooted.

Oh no! After I said it looked like a good 'un. A 'dealer's decoke'
required perhaps. Good to hear you are back in the saddle.

It's not once let me down properly and I utterly adore it, you certainly
didn't steer me wrong, it fires back up on the button after a stall. It
does see the redline on occasion, but not in the high gears, I'm not
sure how long a 'dealer decoke' pins the rev limiter for though...

Heh, sounds like you've already tried it.
Has to be said, "shit in the carbs".
Though the lumpy starting could easily be ignition related. You could
try leaving one plug cap off in sequence (if the ignition system will
tolerate such tricks - some won't) on each cold start and see if it
sounds no worse, to possibly identify the culprit (assuming it's only
running on three to begin with). If it sounds really bad then it's only
running on two and one of the others is to blame IYSWIM. Not sure how
easy they are to get at though. The same strategy might point a finger
at a claggy carb running lean or idle screw needing adjustment.

It's all so much easier to diagnose with a twin. Particularly in the
case of a Morini, because you can quickly transpose the ignition
components to see if it transfers the problem to the other cylinder and
it's usually pretty obvious which one isn't pulling its weight.

    ?

Bill Bunn has always done a good job for me. They service anything and have
an MOT shop. Not quite W3 but not far away....

I used to use Reg Orpin Motorcycles years ago - 145 Goldhawk Rd, W12

A very traditional in the old Hamrax style type of place - who I found
    to be very competent and reasonable if they are still going . . . .;

    That's 6 cents I'll never see again!

Bod sounded a mite annoyed to be called away from his work just to answer
an opening hours question, but it had to be done for the good of all.
